Originally from the island of Sardinia in Italy, the fregola is obtained by kneading the semolina with water to form small balls that are then roasted in the oven. The fregola, also called frégula, is reminiscent of the semolina used in Israeli couscous, although the important difference is that the latter is made from flour and is not roasted in the oven. A classic preparation of the fregola is to leave it in hot liquid until the desired texture is achieved al dente. The fregola can have different sizes but it is generally used in recipes for stews, tomato sauces and especially in recipes with fish: one of the most classic recipes is with clams.
